Tony Abou-Ganim is widely regarded as one of the pioneering and leading bar professionals in the world. He has made dozens of national TV appearances on shows including TODAY, Iron Chef America, Good Morning America, CNBC, Fox News and more. Abou-Ganim is the author of The Modern Mixologist: Contemporary Classic Cocktails (Agate, 2010) which offers readers an in-depth look into spirits and ingredients available to today’s mixologist, both professional and amateur alike. This entertaining and informative journey will take readers from the early stages of the cocktail to what Abou-Ganim has come to deem “Modern Mixology.” Abou-Ganim also has a DVD to his credit, Modern Mixology: Making Great Cocktails at Home, and hosted the Fine Living program Raising the Bar: America’s Best Bar Chefs. Abou-Ganim has also won two Iron Chef America competitions; his first pairing cocktails with Iron Chef Mario Batali in “Battle Mango,” and most recently pairing cocktails in “Battle Tequila and Tortillas” with Iron Chef Jose Garces. His signature branded line of Modern Mixologist bar tools will be released in early 2013, as will his second book, Vodka Distilled (Agate, 2013). Abou-Gamin is also a partner at Inoteca Liquori in New York City.
Abou-Ganim grew up in the bar business, learning the craft from his cousin Helen David at the Brass Rail Bar in Port Huron, Michigan. His initial introduction to the business was steeped in the tradition of classic cocktails and professional barmanship, teaching him the necessary steps to become a leader in the beverage industry. After graduating from college, Abou-Ganim further developed an appreciation for a hand-crafted cocktail using only the freshest ingredients while working at Jack Slick's Balboa Café and then during the opening of "Harry Denton's,” a legendary hangout in Fog City. In 1993 he moved to New York City and took a position as the opening bartender at Po, Mario Batali’s first restaurant. Tony later returned to San Francisco to open Harry Denton's Starlight Room atop the Sir Francis Drake Hotel and it was here that he developed his first specialty cocktail menu featuring several of his original cocktail recipes including the Sunsplash, Starlight and his most famous of them all, the Cable Car.
In 1998, Abou-Ganim was selected by Steve Wynn to develop the cocktail program at Bellagio Las Vegas. He not only implemented his philosophy of bartending and drink preparation, stressing both quality ingredients and proper technique, but also created several original cocktails for the resorts 22 bars. In 2002 he won the Bacardi Martini World Grand Prix – one of only two Americans to ever win this title.
As one of the National Ambassadors of the U.S. Bartenders Guild, www.usbg.org, and Associate Member of the Museum of the American Cocktail, www.museumoftheamericancocktail.org, Abou-Ganim continues to educate about the history and lore of cocktails. He also operates his own beverage consulting firm specializing in bar staff training, product education and cocktail development. Abou-Ganim is currently working on his upcoming book dedicated to the often overlooked spirit, vodka, which is scheduled to be released in Feburary 2013. Keep current with news, appearance and special events at www.modernmixologist.com on Facebook and on Twitter @MdrnMixologist.
A Cocktail Revolution - Caviar & Vodka with Tony Abou-Ganim ... (Friday)There may not be a greater food and drink love affair then the one between vodka & caviar! So you think all vodka is the same? Join Tony Abou-Ganim, The Modern Mixologist and Deborah Keane of the California Caviar Company as they take you through an enlightened trip into the world of vodka and caviar. Does Swedish vodka made from wheat pair best with California white sturgeon? Would a Polish rye vodka best enhance Russian Osetra? Perhaps corn based domestic vodka will work best with a domestic Paddlefish? Whatever your favorite match is this is sure to be an entertaining journey into the enjoyment of two of life's simple pleasures! |
Dolce Winemaker Greg Allen set out to earn a PhD in Mechanical Engineering, but the lure of making wine—Dolce in particular—eventually won his loyalty.
A San Diego native, Allen graduated with a BS in Mechanical Engineering and worked at California’s Mare Island Naval Shipyard as an engineer for the Department of Defense. When Mare Island closed, Allen enrolled in the Massachusetts Institute of Technology (MIT) to pursue a Masters degree in Mechanical Engineering. A lab colleague regularly shared wines over lunch with Allen and told him about the Enology program at the University of California at Davis. Boston’s harsh winter motivated Allen to contact the school and make an appointment to visit over spring break.
The rest, as they say, is history. While enrolled at Davis, Allen won an internship with Far Niente, a sister winery to Dolce. Additional internships in the US and abroad followed. Allen returned to work as assistant winemaker for Dolce and was promoted to winemaker in 2001. More than a decade later, Allen meticulously shepherds each vintage from start to finish. Under his stewardship, Dolce has exceeded its status as the finest American late-harvest wine.
Size Matters! - Tasting the Big Difference (Saturday)Size matters, in wine as in most other, um, estimations. While the traditional 750mL glass bottle format still dominates, what happens when you package wine in larger or smaller formats? Liquid volume to surface area ratio dramatically impacts the experience of the wine in the bottle as it ages. This Master Class is a must for any serious collector and we're pleased to offer the incredible wines of Far Niente as we experiment together. Chardonnay, cabernet and delicious Dolce from Far Niente will be poured from three different-sized bottle sizes....can you taste the big difference? |
Darius began working in hospitality at the age of 15, at The Salish Lodge Inn at Snoqualmie Falls, Washington. He spent five years working on the Red Prussian Luxury German train, serving American clientele who were traveling in Europe, gaining some knowledge of wine there as well as on backpacking trips and by harvesting grapes in Italy and Greece. He went home to Seattle and worked as the buyer and staff educator for Theoz restaurant there and for several Tom Douglas restaurants, including the Dahlia Lounge, Palace Kitchen and Etta's Seafood. Darius went on to work in Las Vegas opening Charlie Palmer's Aureole restaurant at the Mandalay Bay Resort. In 2005, Allyn became the 60th American to pass the Master Sommelier Exam and he began his wine consulting business the following year as a partner in Wineworks Consulting Services. After many successful years and projects around the globe, Darius and his wife (a chef) relocated to Los Angeles in 2011 and accepted a position as Sommelier/Beverage Director at Montage Hotel in Beverly Hills. When not busy, Darius also enjoys his first passion of playing music – mostly acoustic guitar, piano, and drums (the only one he was trained on).

Perfect Partners - Mushrooms & Pinot Noir (Saturday)While experimental pairings sometimes work, there are certain classic combinations in the food and wine pantheon that partner perfectly, every time. Mushrooms and pinot noir, in all their respective flavor and textural profiles, are one such partnership. We've asked Chef Gabriel Ask of Montage Beverly Hills to work mycological magic while our team of Master Sommeliers and other wine experts work through a flight of pinot noirs from around the world. Come sip, nibble and learn as we explore the art of pairing pinot with ‘shrooms.

Almost 25 years ago in a Jazz Club in Paris, Dimitri Augenblick had his first glass of wine...It was a love at first sight! As the business developpement. manager and member of the family owner, Dimitri Augenblick is working with the team of Cos on making great wines, on meeting worldwide Wine lovers and sommeliers. This is not only a part of his job but also his passion. Cos is today one of the greatest wines of the Médoc which can even surpass The Premier Cru. Through all the wines of Michel Reybier's Estate such as les Pagodes de Cos, Château Marbuzet, Goulée by Cos, Cos Blanc and more recently Hetszolo a Tokaj from Hungary, Dimitri's purpose is to place them in all the best spots of the world.
The Power & Grace of Château Cos d'Estournel (Saturday)Lovers of great Bordeaux need no introduction to the legendary wines from Cos, one of the benchmark châteaux in Saint-Estèphe, the most northerly of the Médoc appellations. A “second growth” estate just across the stream from neighboring Pauillac's Château Lafite-Rothschild, Cos d'Estournel was originally named for the pebbly hill on which its cabernet sauvignon and merlot vines thrive. We are very pleased to welcome Mr. Dimitri Augenblick, the Director of Development at Cos, as he guides us through an extraordinary tasting of wines from the 70's through to the 2009 vintage. |

Join us we examine malbec across multiple terroirs and techniques for an in-depth Master Class on this Old World varietal that is now a New World star.

Come taste a true example of American terroir from this iconic vineyard, first planted in the late 19th century, where place still speaks louder than technology. Older vintages of Monte Bello are very rare and space is limited at this seminar. Wines poured will include historic benchmarks like the 1984 and the 1995 vintages, alongside the 2006, 2007, 2008, 2009 and 2010 bottlings. We'll also have an exclusive chance to taste the not-yet-released 2011 and 2012 vintages right out of barrel.

Riesling From Around The World (Friday)Ask most winemakers and sommeliers what is the world's most versatile white varietal and the answer is likely “riesling.” From the bone-dry, delicate kabinetts of the Mosel to unctuous Alsatian Grand Crus to relative newcomers like Washington State and Australia's Clare and Eden Valleys, riesling is a chameleon grape that is deeply reflective of both terroir and winemaking skill. Come taste along with our panel of experts as we present a Master Class on one of the industry's benchmark wines.

Dennis Cakebread began his career in the wine business while still in school, when he and his two brothers would help out at the family winery, begun by Jack and Dolores Cakebread in 1973. Today, Dennis oversees the sales and marketing initiatives of this now internationally distributed winery, and takes great pride in the winery’s growth and achievements of the last 40 years.
Since joining the winery full time in 1987, Dennis has been active in many industry issues, particularly direct-to-consumer wine shipping. His efforts helped change the direct-to-consumer laws through a Supreme Court victory, which has led to ground-breaking legislation enabling most consumers in the U.S. to order wines directly from their favorite producers.
Dennis is active in several wine industry groups. He is a past president and board member of the Napa Valley Vintners Association and The Wine Service Cooperative, past co-chair of Auction Napa Valley and a past board member of Family Winemakers of California. He now serves on the boards of the Wine Institute, Wine America, Free the Grapes!, American AgCredit and the Coalition for Free Trade.

Her father, Nicolas Catena Zapata, often referred to as “the Robert Mondavi of Argentina,” helped facilitate the ascent of Argentine wine onto the world stage.
Laura graduated magna cum laude from Harvard University in 1988 and has a Medical Doctor degree from Stanford University. She is currently managing director of Bodega Catena Zapata and her own Luca Winery in Mendoza, Argentina, as well as a practicing Emergency Medicine physician in San Francisco.
Catena has been called the “face” of Argentine wine. She has been an invited speaker at the American Society of Wine Educators, Decanter Wine Encounter, The Smithsonian Institute and the Vancouver Playhouse among others.
In 2010 Laura Catena released her book Vino Argentino, An Insider’s Guide to the Wines and Wine Country of Argentina (Chronicle Books), the first book about Argentine wine by a U.S. publisher. Dave McIntyre of The Washington Post writes: "Vino Argentino is a mouthwatering introduction to the wines and culture of Argentina."

Caryl Chinn has what many consider to be a ‘dream job.’ She has spent the last 15 years in New York City producing special events with celebrity chefs – for nearly a decade as the special events director for Bon Appétit magazine, and most recently at an agency with such illustrious clients as the Food Network, the New York Yankees and Godiva Chocolatier. While there, she collaborated with Festival Founder Lee Schrager on the establishment of the Food Network New York City Wine & Food Festival – sister event to the wildly successful South Beach Festival. |

Antonio's fascination with wine started at an early age. His parents retailed Italian wines, while his maternal grandfather had a deep love for Bordeaux, Burgundy and the Rhône. Antonio was reading avidly about the world's major winemaking regions as a teen and wrote articles on Burgundy and Bordeaux for his high school French class.
Antonio’s first publication, Piedmont Report, conceived while Antonio was a student at the MIT Sloan School of Management, made its debut in 2004 and quickly established itself as the premier guide in the world for Piedmont wines. In 2006 Antonio joined Robert Parker’s The Wine Advocate where, as lead critic, he covered the wines of Italy, Champagne, California and Burgundy.
Sensing a need to return to his entrepreneurial roots, in February 2013, Antonio Galloni announced the launch of www.antoniogalloni.com, a multimedia, technology driven platform where Antonio will continue his extensive reporting on the wines of Italy, Champagne, California and Burgundy, while expanding coverage to other regions.
Antonio has a BA from the Berklee College of Music and an MBA from the MIT Sloan School of Management. Antonio lives outside New York City with his wife and two children.

These are exceptionally rare bubblies made in tiny quantities so please note space is limited.

Fritz Hatton is one of the nation's most experienced wine auctioneers. His wine auction experience dates back to1980, when he joined Christie’s to help start the Wine Department in the United States. In this capacity and in partnership with the leading American wine retailer Zachys he was responsible for the largest auctions of wine ever organized in the United States. Numerous wine records were established by the department during his tenure, among them the highest price for a single lot of wine.

In 1981, Alois Kracher took over from his father the vinification responsibilities at the family winery. It was also the year that his son, Gerhard Kracher – the next promising generation of the talented Burgenland winemaking family – was born.
The important contacts built up by his father, Alois, strongly helped Gerhard to quickly find the right partners in the wine world, to breathe international air, and to learn about the latest developments and trends in wine production and wine marketing. Within a short period of time, Gerhard was able to acquire a profound wine knowledge as well as discover a bevy of opportunities, train his palate, and learn how to taste and differentiate wines and wine styles.
Today, Gerhard manages the winery with the help of his mother, Michaela, who still takes care of the organization and administration of the winery. It is an exciting heritage that the 31-year-old carries forward.
This includes not only the world-renowned winery, its sought-after wines with outstanding ratings, and the responsibility to continue to produce excellent wines, but also the spirit, strength, firm will and consequence that Gerhard inherited from his famous father.
The Legendary Dessert Wines of Kracher (Saturday)When Alois Kracher passed away in 2007, the international wine community collectively mourned. Personally loved as much as his wines, Kracher nearly single-handedly revived the great sweet winemaking tradition of Austria where his unctuous trockenbeerenauslese among other botyritized wines scored huge acclaim. We are very honored to present this examination of Kracher's greatest wines – please join us as we pay homage to the man and his acclaimed products. |
Seth Kunin (along with his wife, Magan and their daughter, Phoebe) is the owner of Kunin Wines, a boutique producer of Rhone and other varietals from California’s Central Coast. He started the venture in 1998, after a long stint in the restaurant business – most notably as the GM of Santa Barbara’s Wine Cask (the Central Coast’s only Wine Spectator Grand Award winner at the time, and one of fewer than 100 restaurants in the world with the award).
In addition to producing award-winning wines under the Kunin label, Seth was the consulting winemaker for Westerly Vineyards in Santa Ynez’s Happy Canyon for ten vintages, and crafted what FOOD & WINE magazine called “America’s Best” Sauvignon Blanc in 2006. He has served as an associate faculty member in Alan Hancock College’s Viticulture and Enology program and currently sits on the board of the Santa Barbara County Vintner’s Association. He is on the steering committee for the Central Coast Wine Classic and has been working and consulting with the Masters of Food & Wine, Pebble Beach Food & Wine and now Los Angeles Food & Wine for over 15 years.

Originally hailing from Redding, California, Michael Lay joins Restaurant 1833 with more than 10 years in the restaurant industry, with experience ranging from fine dining to specialty coffee to craft cocktails. His bar menu is a reflection of his respect and love of the cocktail classics balanced with his creativeness and excitement for using unique methods and fresh ingredients.
At age 16, Michael began his hospitality career as a dishwasher in a local mom & pop BBQ joint. From there, he spent the next decade honing his skills behind the bar in Seattle and San Diego before joining the team at Restaurant 1833. “At 1833, I’m given the freedom and encouragement to experiment with the abundance of fresh ingredients available throughout the Central Coast and incorporate those into both classic and new cocktails,” says Michael. “I’m constantly inspired by everything that makes California special and I try and reflect that on the menu.”
Paying homage to another Northern California region, Michael created the So Apropos cocktail, infusing hickory smoke into bourbon using a vaporizer and a set of lab beakers. He also developed a program of barrel-aged cocktails using former bourbon barrels. The barrels, which are playfully given southern belle names, give guests the opportunity to sample a Ruth-Anne or Abigail Negroni, depending on what’s ready for tasting. The rest of the menu draws on the apothecary history of the Stokes Adobe house in which 1833 resides, featuring house made elixirs, syrups, and bitters, with cocktails separated into categories such as “Pain Killers,” “Stress Relievers,” “Elixirs,” and “Aphrodisiacs.”
Outside of the restaurant, Michael enjoys being outdoors, driven by his need for close proximity to the ocean. He spends his free time dedicated to expanding his knowledge-base to enhance his own talents through research, traveling and of course, taste-testing.
Raising The Bar - Mixology Lunch at Restaurant 1833 (Friday)The San Francisco Chronicle's Michael Bauer recently wrote that “1833 is a restaurant fueled by passion,” and that passion includes one of California's most eclectic and extensive cocktail lists. Come join us for lunch with a “who's who” of rising guest chefs like Hedy Goldsmith, Abram Bissell and David Lefevre who'll join Executive Chef Levi Mezick in a multi-course meal meant to soak up all that booze. In 2002, photographer Bret Lopez purchased his grandfather J.J. Cohn's legendary Rutherford Estate. In a commitment to protect and preserve the property that had always been the true north of his life, he shifted focus from a stellar forty year career as an internationally recognized advertizing photographer (campaigns spanning fashion, beauty, food, cars, album covers, celebrities) to that of guardian and vintner. The result of that commitment is Scarecrow Cabernet Sauvignon and most recently M. Étain.
For Bret, the sacred earth of his home in Rutherford is literally at the heart and soul of these images. "Every morning I take the dogs on a walk and more oft than not I come home with something worth shooting - most recently flowers and mushrooms." The power of his images speak for themselves. Viewing this portfolio provides a spectacular chance to focus through the eyes of a true visionary as he regards the wonder of the terroir that is the J.J. Cohn Estate.
"I just think taking pictures is really fun."
Scarecrow Vertical - Enchanting Wines from a Fabled Land (Saturday)When J.J. Cohn purchased his Rutherford estate in 1943, he was far more concerned with yellow brick roads as Executive Producer of “The Wizard of Oz” than he was with cabernet sauvignon. When his grandson Bret Lopez and his partner Mimi DiBlasio took over the legendary vineyard site in 2002, the world had changed and an iconic wine was born – “Scarecrow,” in reference to the heartfelt character who only thought he lacked a brain. We are very honored that Celia Welch, winemaker at Scarecrow, is joining us to review every vintage of this cult hit; it's a once-in-a-lifetime opportunity and only at Pebble Beach Food & Wine. Please note that seats are extremely limited at this seminar. |

Luckily, Parr works in the best of both worlds as wine director for Mina Group and its signature restaurant, MICHAEL MINA, where he presides over a list that comprises wines from all over the world, including an in-depth list from Burgundy. Parr also presides over the RN74 wine list, a Wine Spectator 2010 Grand Award of Excellence winner. “At Mina Group, I have the opportunity and challenge to find wines that can match the wide range of flavors presented within each restaurant, and even within a single dish at one restaurant,” says Parr. “In building multiple cellars, I have put an emphasis on mature wines which have the depth to fully complement the cuisine. Nothing is more pleasing than finding the perfect pairing.”

The Triumph of Tiny Bubbles - Champagne from the Grower's ... (Friday)The Champagne region has long been dominated by the big marques or houses that purchase grapes from thousands of small growers spread across more than three hundred villages. The past decade, however, has shown explosive growth and interest in “récoltant-manipulant” wines, or “grower-produced” wines – essentially farmer's fizz, if you will, in which the growers themselves bottle the bubbly. Join critic Antonio Galloni of the influential Wine Advocate as he leads you through a tasting of extraordinary Champagnes, all made by the farmers who grew the grapes. These are exceptionally rare bubblies made in tiny quantities so please note space is limited.
Ornellaia - The Pride of Tuscany (Friday)By planting Bordeaux varietals in 1981, ORNELLAIA revolutionized Tuscany by proving the region could produce world-class blends to rival its French neighbors. Located in Bolgheri along the coast of the Tyrrhenian Sea, this singular place has become synonymous with the apex of Italian winemaking in the modern era. We are very honored to showcase a retrospective tasting of ORNELLAIA in key vintages, hosted by winemaker Axel Heinz and moderated by Antonio Galloni.
